Guest guest
I found this sweet potato bread recipe in the GFCFrecipe archives while I was looking for something else. Don't know if it will help you or not but I think I will try it tomorrow if I can get the chance. === Sweet Potato Bread 1 1/2 cups GFCF flour for bread mixed 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon cinnamon 1/2 teaspoon ground allspice 1/2 cup chopped walnuts 1/2 cup raisins 1 1/2 cups pureed sweet potatoes 2 well beaten eggs 3/4 cup honey 1/2 cup oil Preheat oven to 350 degrees. In medium mixing bowl, combine flour, baking soda, baking powder, cinnamon, allspice, walnuts and raisins. In another mixing bowl, combine sweet potato puree, eggs, honey and oil. Mix well. Add sweet potato mixture to dry ingredients and beat again. Pour into oiled 9x5 " loaf pan and bake for 50-60 minutes or until bread tests done. Cool on wire rack for 20 minutes before removing from pan. I use chopped pecans and dried cranberries.
