Hope it helps with the question about what to use if you cannot get guar gum. >>I use Knox gelatin as an egg/binder substitute (son reacts to guar gum, since it's a legume- and he's allergic to all legumes). Some people mix the gelatin with water first, then add it to recipes. I skip that, and just add 1 dry package per 4 cups of flour. mix with the dry ingredients first, before mixing all together.
