WW Cranberry Cookie Kisses POINTS® value | 1 Servings | 20 Preparation Time | 10 min Cooking Time | 120 min Level of Difficulty | Easy desserts | These bite-size sweet morsels are sure to please all of your Christmas guests 3 large egg white(s), at room temperature 1/4 tsp cream of tartar 3/4 cup sugar 1/4 cup canned cranberry sauce, whole berry 1/3 cup dried cranberries, about 80 cranberries Preheat oven to 200°F. Coat 2 large sheet pans with cooking spray or cover with parchment paper. Using an electric mixer, beat egg whites and cream of tartar until stiff peaks form; gradually beat in sugar until mixture is very stiff and shiny. Gradually fold in cranberry sauce (you can add a few drops of red food coloring at this point, if desired) while beating for 1 minute. Drop batter by teaspoonfuls onto prepared sheet pans; press 1 dried cranberry into the top of each cookie. Bake for 2 hours. Cool completely before removing from pans. Store in airtight containers. Put these festive cupcakes on the menu. 2 serving cooking spray (5 one-second sprays per serving) 1 1/2 cup all-purpose flour 1 cup whole-grain wheat flour 2/3 cup sugar 2 1/2 tsp baking soda 1 tsp ground ginger 1 tsp ground cinnamon 1 tsp ground allspice 1 1/2 cup unsweetened applesauce 1 cup molasses 3 large egg white(s) 3 cup lite whipped topping Preheat oven to 325°F. Coat two 12-cup muffin tins with cooking spray. Combine flours, sugar, baking soda, ginger, cinnamon and allspice in a large bowl; mix well. Add applesauce, molasses and egg whites; stir until mixture is moist and well-combined. Fill each muffin tin 3/4 full with batter. Bake until a toothpick inserted in center comes out clean, about 40 minutes. Cool cupcakes to room temperature and serve each topped with 2 tablespoons of whipped topping. --------------------------------------------------------------------- Brocolli Cheddar Cups ( 10 servings - 2 points ea ) 10 oz pkg ready to bake Pillsbury biscuits ( 10 ) 2 cups chopped brocolli cooked and well drained 5 oz Cheddar cheese, shredded 1 Lg tomato, diced 1/4 cup minced green onions 1 Tbs plus 2 tsp margarine, melted ( light ) Preheat oven to 400 F. Between 2 sheets of wax paper roll each biscuit into a circle about 4 inches in diameter. Into each of ten muffin pan cups place 1 biscuit, press each biscuit into botton and sides of cup to form a crust. Set aside. In small mixing bowl, combine remaining ingredients and spoon an equal amount of mixture into each biscuit-lined cup. Partially fill remaining cups with water ( this will prevent pan from burning and/or warping ) and bake until biscuits are golden brown, about 10 minutes. ----------------------------------------------------------------- Vegetarian Meat Loaf ( 6 Points ) cup dried lentils 1/4 cup wheat germ 1 cup whole wheat breadcrumbs 1/2 cup cooked brown rice 1 small onion, minced 3/4 cup fat free egg substitute 1 teaspoon ground cloves 1 teaspoon thyme 1 tablespoon reduced sodium soy sauce 4 tablespoons tomato sauce 1 tablespoon olive oil 1 teaspoon Tabasco sauce Place lentils in a small saucepan and cover with water. Cook over low heat for 1 1/2 hours or until tender. Coarsely mash lentils and combine with remaining ingredients. Pour mixture into a loaf pan sprayed with nonstick cooking spray. Cover with foil and bake at 350 degrees for 45 minutes. Remove foil and bake for another 15 minutes or until loaf is firm to the touch. Makes 6 Servings Serving Size: 7 ounces Nutrients per serving: Calories: 296 Total fat: 5 grams Saturated fat: 1 gram Cholesterol: 0 Sodium: 360 mg Carbohydrate: 49 grams Protein: 17 grams Dietary fiber: 13 grams --------------------------------------------------------------------- Cabbage & Tomatoes Head of cabbage, coarsely chopped large can diced tomatoes large can of tomato puree chopped onion 1 T brown sugar (or use the sugar twin) 1 T lemon juice Mix everything together and heat over low heat, stirring to avoid the sugars from scorching the bottom.
