I suspect it might be sea salt, but even if it isn't, there's no way to know whether or not it is iodized :-( Also, the dry sour has lactic acid, which is derived from dairy, and so not allowed. It may be an insignificant amount, but I wouldn't take the chance. Sorry to rain on your bread parade.
