I usually take Yoplait yogurt and fruit,

or a roll up made with provolone cheese and hillshire farms deli ham and turkey

– add pickles and fruit and a diet coke and I am set. My kids sometimes

take heated leftovers if they feel like keeping up with a thermos. Tom’s

light bread ( in the files) makes a great pb and J sandwich.

I take pretty much anything you could imagine. Anything that is,

except salads. I don't find them satisfying, unless it is a nicoise

salad with tuna fish, green beans, and a little potato. I'm often

very busy and so I want something that won't result in me starving

if I can't eat for a long time.

I take leftovers from dinner the night before, like pizza, rice and

chinese, thai, or indian stir fry (frozen rice is easy), spring

rolls (not fried), rolled vegetable sushi (I like avocado)... Pretty

much anything you can imagine for dinner, I take for lunch. Thai

kitchen rice noodles are convenient, but I mostly like their small

packets (onion or garlic), not their instant packages.

I also enjoy sandwiches, using a variety of breads by Bette Hagman

(not so crazy about the garbanzo flavor of Tom's). My favorite combo

is hummus with avocado and low fat swiss cheese, with lettuce or

tomato if I have it.

Same here. Pretty much anything goes for me. Today I have a ham &

cheese sandwich with chips, an apple, & a pudding (I always need

something sweet in the afternoon) :-) I normally just bring

leftovers from the night before's dinner. It's convenient, just

pack in tupperware when we're cleaning up dinner and grab & go in

the morning. Yesterday I had lightly coated, pan seared tilapia

with red beans & rice (and my apple) for lunch. I've never even

taken a salad to work. Not as satisfying as hearty left-overs.

I frequently bring left overs. I also like rice cakes with pb & j. I

sometimes make tuna salad and bring a container of that and the Energy

GF crackers, spread it on them and it is pretty good. Amy's microwave

GF stuff is pretty good too. What about a bowl of mixed fruits? I have

also the night before made pasta salad with the privious nights left

over meat, like chicken, pasta, mayo, celery, peas, cheese, s & p. I have

done corn chips and salsa.

I'm not able to work, but I do occasionally need to pack a lunch.

I use a soft-sided cooler with freezies in it.

Pea salad is a favorite of mine: peas, mayo, diced tomato, shredded

cheddar. It can be eaten plain or on rice/corn cakes.

Corn cakes with sliced cheese.

For folks who eat tuna (being vegetarian, I do not), tuna salad can

be dressed up with artichoke hearts, olives, etc. Eat on corn thins

or wrapped up in lettuce.

Spinach salad/dip wrapped up in lettuce.

Fresh spring rolls (tapioca wraps, tons of veggies, a tasty dipping

sauce).

Caprese (mozzarella, olive oil, tomatoes, basil).

Chickpea salad with roasted peppers and feta.

Veggies with a garlicky cream cheese dip.

Hummus or baba ganouj + veggies and corn chips.

We've had Thai Kitchen noodles for quite a while in the states. I

like some flavors more than others- am not a huge fan of their

instant noodles (that you just add water to), but it's great to have

the option. SO CONVENIENT FOR A PLANE TRIP!!!!

Actually, I wanted to share- today I had a great " instant " lunch by

Taste of Thai. You just add water and microwave the container for a

few minutes. I took along a ziploc baggie of fresh spinach and threw

it in for the last two minutes- it was great! (I had the coconut

ginger flavor- haven't tried the others yet.) They state vegan and

gluten free on the label. :) The noodles were a good texture too...
