Guest guest
We are going to CT to visit my in-laws for the July 4th week-end. This year they would like to take dinner to the park for the fireworks. I need to think of something to suggest that my sister-in-law can make that is naturally gluten-free or that she can buy premade for me. All I can think of is lunchmeat in a lettuce leaf, but how do I know it the lunchmeat is gluten-free? Ah! Any ideas? Thanks, in MA
Guest guest
I fixed a GF/veggie picnic on the 4th last year, and 1 easy thing we had was quesadillas (many corn tortillas say " gluten-free " right on the package) with sauteed onions or tomato slices inside, and then had fresh guacamole to dip them in. As long as your SIL uses a clean pan and cutting board, this should be pretty easy for her to do and keep safely GF. We wrapped them in foil and used a commercial warming pack to keep them warm until dinner. Potato salad can be GF if care is taken with the ingredients, as can green salad, fresh fruit, popcorn, corn on the cob, and even BBQ or baked chicken if the right sauces are used.
