Hi all. I am not monitoring the list (too many messages!!) but I thought

these resources might be of interest. First, there is a website with a huge

list of gluten free vendors. The site was aimed at those with celiac

disease, so the vendors may or may not have products free of casein or any

other allergies that you might be dealing with, but there might be something

new in here.

Also, when I was at my local Fresh Fields, I picked up a copy of the " Living

Without " magazine (www.livingwithout.com). Again, this is aimed at gluten

free for celiac disease, but there were some very interesting articles

including alternative flours (with sources) and an article about a mother

who had 3 highly allergic kids that she, in desperation, learned to feed

using primarily tropical root foods. She says that these are the most

tolerated foods on the planet, and include sweet potatoes, malanga,

arrowroot, lotus, cassava (tapioca) and artichokes. She learned how to make

flour out of these things, and now she sells them. They are very expensive,

but she says that many kids who have been gluten free/casein free for some

time have made remarkable further progress on their special diet.

has a baking powder derived from sweet potatoes that she says will rise

heavy doughs. I am finding leavening to be a problem when I try to make

loaves, so I plan to order some of this to give it a whirl.

There is also a gluten free shopping service- www.glutenfreegrocery.com- for

those who don't have easy access to some of these more obscure ingredients.

It might save you on shipping since you can order from many manufacturers.
