Guest guest
You can also make this without the yogurt. I make it all the time but I have never tried adding the yogurt to it. I do add 3/4 cup of water though as it's pretty thick. It seems to take longer to cook than just plain cake mix, I usually add an extra 5 to 10 minutes on to the cook time. Another option is to use a large can of lite cherry pie filling and a devils food or other chocolate cake mix. That one is my favorite. It doesn't need any extra water though, just the egg whites and pie filling. Kris _____ From: Bette Holzer Sent: Wednesday, December 15, 2004 5:20 PM To: Serious-Weight-Watchers Subject: cake recipe Hi everyone, I know that some of you are very fond of the low-points cake recipe that calls for diet soda. Well, there's another one you may or may not be aware of that is really delicious and even nutritious! The " main " recipe that I make is as follows: Pumpkin Spice Cake or Muffins 1 box spice cake mix (Betty Crocker) 44 pts 1 15-oz. can Libby's pure pumpkin 0 pts 2 egg whites 0 pts 1 6-oz. container Yoplait Light Very Vanilla Yogurt 2 pts Mix together the pumpkin, egg whites and yogurt, then mix in the cake mix. Either spread in a 9x13 pan or in 24 muffin cups, sprayed with Pam. Bake at 350 for approximately 15-20 minutes. Cool, then remove from muffin tin. Cake yields 12 pieces at just under 4 pts each (roughly) and 24 muffins are 2 pts each VARIATION: (I tried this one today and it was absolutely yummy!!) Banana-Spice Muffins/Cake 1 box spice cake mix (Betty Crocker) 44 pts 3 very ripe (brownish) bananas, approx. 6 ounces = 4.5 pts 2 egg whites 0 pts 1 6-oz. container Yoplait Light Very Vanilla Yogurt 2 pts (because the bananas are mushy, I only added 1/2 a container of yogurt) Mix and bake as above. Points are the same. Bette

Guest guest
Kris - I haven't tried the choc & cherry combination - that sounds good! Is it dense? Sometimes these things turn out pretty heavy. The recipe I originally received called for the yogurt, and I've been afraid to leave it out -- LOL. It's fun to experiment with different flavors, but I don't much like failed projects! Bette (who has chocolate cake mix on hand but needs to get some cherry pie filling!) Guest guest
Yes, it's pretty dense. It doesn't rise as high as just plain cake mix. I know what you mean about failed projects. I made the choc/cherry cake last week and it didn't look quite right so I added the water to it and it came out flat and chewy. More like a brownie and less like cake. My family still liked it and they ate it no problem. I figured out later that I used the small can of filling instead of the large and that's where I went wrong. It didn't want to mix very well and that's why I added the water. I probably beat it for to long also which didn't help any. Guest guest
Kris, Are the cakes/cupcakes a trigger for you? I find that I have to be AWFULLY careful. One goes down too easily....and a second or third calls my name. I have to really turn on the control! And yes - you're right -- sometimes overbeating or even underbeating affects the rise of the cake. Too many variables! LOL... Bette

Guest guest
Lately everything seems to be a trigger for me! I used to have a really good handle on most things but since we moved I haven't been doing as well. I went out yesterday and bought a ton of low point snacks. I think that will help. I realized that part of the problem was not having any good substitutions in the house. So hubby would bring home Oreo's which is usually not a problem but I haven't had any low point snacks around that I could substitute, so I just ate the Oreos. BIG mistake!! I can't stop at just one or two and leave it alone. So, I just spent about $75 on my low fat WW friendly foods. I think another problem for me has been that I am really busy unpacking and decorating and trying to get settled into our new house. Well, I have a tendency to not eat while I'm working and then the next thing I know I'm starving and will eat anything in sight. All the talk about eating five and six times a day got me realizing I haven't been eating that way and I used to. I shouldn't let myself get so hungry because that's when I tend to eat/over eat unhealthy things. So yesterday I got some TV dinners to cook quick so I don't have to go through cupboards and try and figure out what I'm having for lunch or dinner. Plus lots of apples and caned fruit to snack on. When we first moved here all the apple and pear trees where loaded with fruit and it was so cool just to walk out back and pick fruit right off the trees and eat it. Can't wait till spring!! Our orchard has been set up to produce fruit from April/may to October. Come February I need to figure out how to prune the trees properly though. I'm hoping to find some extension classes that cover how to care for orchards. Otherwise I have a couple books I bought and I will have to figure it out on my own. Guest guest
Yea, it will work fine with out the egg whites. They are just in there to help the cake rise a bit higher. It doesn't alter the total points any to put them in so I go ahead and do it. Kris Re: cake recipe I make the same cake recipe minus the egg whites. I cut it into 12 pieces as well and it comes out to be 2 points per serving. Terra
