Guest guest
Pat, does the GFCF cheese melt? I heard it doesn't. I personally haven't seen soymage or tofutti anywhere.Where do you but it? Beth
Guest guest
Beth, No, the Soymage cheese doesn't melt worth a hoot and like I said it really is kind of gross, but eats it. The way we cook his grilled cheese is to use Ener G Tapioca Loaf cfgf bread with Willow Run soy margarine and put it on a griddle on medium heat and cover it. The cheese will melt a little that way, just be careful not to burn the bread. We make the mac-n-cheese recipe from Special Diets for Special Kids In order to get it to melt, we shred it into the sauce and cook it forever. Like I keep saying, it's gross, but eats it. We buy Soymage at our local hfs. We get " Cheddar " blocks for the mac-n-cheese and " American " slices for the grilled cheese. It's expensive, but oh well, what isn't? I've made pizza, mac n cheese, and grilled cheese sandwiches using these and the melting properties were fine. My kids love them. I don't even bother looking for Soymage any more, but I know my HFS had it. Hope this helps. ( & Malachi's mom) >> Speaking of Tofutti cheese.... Guest guest
Hi : I don't know where you live, but your best bet is a kosher market because they will most likely carry Tofutti products since it's parve (that is, dairy free). GNC is not a great place to look for foods, at least not where I live. I go to an organic market that also carries lots of supplements/vitamins and I also frequent a couple of kosher grocery stores. Check your yellow pages for these kinds of stores and call ahead to see if they carry the Tofutti products. Another option is to look for a food coop in your area. Good luck. Guest guest
> I am looking for a CF and soyfree cheese also. Also I need the same for > margarine and mayonaise (all must be GF too). Any help anyone? Special Diets for Special Kids has a mock cheese recipe made from cashew butter. I've lent my copy, but maybe someone else can post the recipe. I thought it tasted great. RE mayonaise, I've seen some recipes at the gfcfrecipes egroup. You might try searching its archives for a quick answer.
