Calcium is in a ton of other stuff besides milk-almonds for example - and almond meal is an excellent baking substitute. Calcium in non-milk sources is actually better than cow milk in regards to absorption. We make a beef broth out of boiling bones for 48 hours with vinegar. If you eat low mercury fish with the bones like salmon you get good calcium as well. In recipes we use full fat coconut milk. It has a nice consistency. Guest guest Posted April 23, 2006 Report Share Posted April 23, 2006 Rice milk, almond (or other nut) milk and DariFree (found at http://www.vancesfoods.com/) can be found gluten, dairy and soy free. Not all brands of rice milk are gluten free so read labels. Blue Diamond makes a yummy chocolate almond milk. DariFree is powdered so it subs well in recipes and I have a fantastic GFCF " ice cream " recipe using it (should be in the files....it's called Matt's ice cream). I use Pacific Foods rice milk (preferred) or Wild Oats brand. I also use coconut milk in recipes. Like another poster mentioned, we do calcium supplements for those who can't have dairy. One last thought, can your friend's child tolerate any other animal milk? Some casein intolerant folks do fine with goat's milk which is usually fairly easy to find even in regular grocery stores. My milk allergic child could not tolerate it, but I know some who can. It's made from potatoes, very unlikely to cause allergy problems, and it's fortified with calcium etc. It comes in a powder that you mix with water.
