I have a wonderful recipe from my dear MIL that I zipped up a bit with Bette Hagman's "sourdough" starter. It makes 2 HUGE loafs, that freeze well whole or when sliced. I also use this dough as a "sweet dough" for making GF Cardamom bread, cinnamon rolls or buns and it makes SUPER french toast!Best!CassiGluten free in downtown Imatra! I like their plain white rice bagels, toasted. Otherwise, i like Whole Foods GF bakehouse bread. Food for life also has a rice tortilla, although I don't know that I would recommend it cold with PB & J. There are always rice crackers or rice/ popcorn cakes (although to be frank I am SO over those - but maybe your little one would like them)' However, I think the best GF bread is that homemade from Bette Hagman recipes. Have you tried any from her " The Gluten Free Gourmet Bakes Bread? " Some online recipes are good, although I'm really picky. I've also heard good things about Carol Fenster's latest book. Besides the traditional P & J how about tuna salad in onigiri (rice triangles wrapped in a sheet of nori)... they're very popular with kids in japan, and really yummy. you can buy special plastic wrap in japanese stores to keep the nori separate from the rice and thus keep it crispy. Or, if you go thai, how about rice paper spring rolls with whatever filling inside she likes. I found whole grain rice cakes at WF that even have some fiber. I think homemade bread is better than anything we’ve bought, but I do like the breads/English muffins from Foods by . There are also rice tortillas out there—maybe two layers like a quesadilla, cut in quarters? Or, how about slices of apples she can dip in her peanut butter? Or pb and honey mixed up to dip them in? We like pb on celery sticks also. Or just put the pbj in a little cup and give her a spoon! Add on the side something to make up for lack of bread, though there is so little nutrition in the tapioca bread, as I recall, that she’s not missing much by skipping it. Laurie lbilyeu@... My son went through a phase (actually overlapped diagnosis) where he would just eat the filling out of sandwiches, so I stopped wasting the bread and just gave him a little bowl of peanut butter and a spoon. (he also had sides like apple slices, dried fruit, carrots, etc. that he could dip in the PB) Then we discovered you can buy Skippy in little plastic tubes - perfect for lunch on the go. I know that " Living Without " magazine recommends using lettuce or greens as sandwich wraps.
