I had written down that this one is 1 pt a serving but a little voice in the back of my head is saying that it might actually be 2. I've made many variations on this recipes, with and without meat, different types of beans, corn, seasonings, etc. I've also made this in the crock pot which makes it more stewy than soupy, if that makes sense. Taco Soup · 1/2 pound Lean Ground Beef · 1 (15 0unce) can Kidney Beans, drained · 1 (15 0unce) can Diced Tomatoes · 1 (15 0unce) can Garbanzos, drained · 1 (16 Ounce) can Corn, drained · 1 (4 Ounce) can Diced Mild Green Chiles (optional) · 1 package Taco Seasoning · 1 package Ranch Dressing Mix · 1 48 oz can or bottle of V8 Brown beef with onion and drain fat. Put in a large stock pot and add all remaining ingredients. Bring to a boil while stirring, then reduce heat. Simmer uncovered 15 minutes. Refrigerate & reheat any unused soup for later meals or snacks. * Variations: You can make several changes that won't affect points. For example, you can sub Rotel tomatoes for the plain diced tomatoes. I've subbed white corn and black beans in. I also usually don't put Ranch dressing in... just two packs of low sodium taco seasoning. I like it spicy! My other 2 WW favorites are 1 Pt Velveeta Veggie Soup (sadly not CORE but worth the use of extra points, IMHO) and Jell-O Fruit Slushies. I'm sure these have been floating around for a while, but recipes are below for anyone interested! ------------------------------------------ Velveeta Veggie Soup (Not core) 1 bag frozen broccoli 1 bag frozen cauliflower 1 can Rotel 3 cans lowfat/fat free chicken stock (canned is just fine) 10 oz Light Velveeta Bring veggies and broth to a boil then add cheese. Stir until cheese is melted and the soup is heated. Keeps wonderfully in the fridge and makes a great snack if you need a pick-me-up. 1 pt per cup. (You can make lots of variations on this by varying the veggies.) ------------------------------------------ Jell-O Slushies/CORE Pseudo-Daiquiris (Core ingredients, though I don't know if one would count this as a sweet no-no or not.) Pile frozen strawberries into your blender and pour a can of diet 7-Up, Sprite or Squirt over the berries. (I like Diet Squirt... gives it a little extra kick.) Let the contents sit for a moment or two to thaw the berries a bit. Put the cover on the blender and pulse the blender several times to start breaking up the berries.
