Adding honey will increase the carbohydrates. If you have not been eating a lot of fruits and honey, you should probably increase the amount you eat gradually. Eating too much fruit and/or honey causes problems for some people, so you will want to discover the amount that you can tolerate without having symptoms. Ripe bananas and fruit juice (diluted) are high in carbohydrates, too. I noticed the grocery stores in my area are starting to carry nectarines. I am not sure what stage they are and if you could tolerate them yet, but they are a sweet fruit that is going to be high in carbohydrates. They are a really yummy fruit, too. When they are ripe they are so sweet! If you are able to tolerate two servings of fruit a day, no one should say your diet is anything close to Atkins! They only want the best for you. Increasing carbs, fat, and protein will put on weight- remember, you want healthy weight! Any oil or fat adds calories- and cocoa butter is a fat. I'm not sure what you can tolerate, but summer is good for ice cream, and I have seen many SCD ice cream recipes using the higher fat creams or half and half. Blend this with pureed fruit and honey and freeze for a high cal snack. Maybe some of the more experienced cooks here can give you suggestions. When you cook, adding a bit of legal oils and butter to your food also increases the calories. The yogurt also has carbs and I don't think it is allowed on Atkins. Fats have 9 calories/gram, and carbohydrates and protein have 4 calories/gram. You need all of them- protein is important for muscle, carbs (including veggies and fruits) and fats, so loading up on too much fat for calories won't keep you healthy-but you can use fats to increase the calorie density of foods. Avocado and cheese are high dense calorie foods because of their fat content. Examples of adding calories to other healthy foods are the avocado mayo with turkey, as suggested. Eat a banana with nut butter, add melted cheese to veggies. Drizzle some sunflower oil on veggies for flavor...any tasty (legal ) combination you can think of. As a growing teen you need plenty of calcium and protein as well. As you start expanding your diet, and your parents see you eating healthy, I hope this will ease their fears. The SCD is actually pretty close to Atkins but keep in mind the Atkins is meant for overweight people to lose weight. If you're thin it shouldn't cause to you lose more weight. The things you want are calories, not carbs. It may sound crazy but you want rich foods -- meat, eggs, and other oils, fatty things. I don't know your ailment (because you didn't mention it) but if it's IBD one thing you face is malabsorption. As your gut heals you absorb more nutrients and everything should stabalize. It sounds like you're heavy on the sweet fruits. If you're early into the diet limit sweet fruit to 1 or 2 pieces a day. My belief is Klebsiella, which normally feeds on branched polysaccharides, will feed on excess fructose for a while until its population gets weakened and the good bacteria gets stronger. This can take months and months, perhaps a year or two, so you have to give it some time. If you feel up to it do some resistance training like lifting weights. If you're thin itshouldn't cause to you lose more weight.I lost 5 lbs in the first few weeks. More calories may work for you, but I need that in addition to carbs, which I've found through trial and error. I have UC, diagnosed September 08. It kind of confuses me. Are people's tolerance of carbs like so many other things in this diet, some people do well with them and others don't? Or is it a universal thing? Did Elaine have anything to say about how many carbs we should eat?
