Guest guest Posted June 29, 2006 Report Share Posted June 29, 2006 I need the cornbread recipe!!!!!!!!!!!!!!! thanks, fran Chili Finally have a minute to sit down and give y'all my chili recipe....Actually, I just made a 25 liter pot... so its fresh in my head. Have tons of company coming this weekend,(Imatra Big Band Festival) so will be making GF cornbread as well (no one can tell the difference from regular! and I aint telling them otherwise!)Im guestamating on measures here, as Im so used to Kg and mg and ml so I will try my best! Also, this is best if you make it a day or 2 before and let it set in the fridge when cooled.1½ lb lean ground meat of your choice1 lg can of diced tomatos (unseasoned) Del Fratelli is great1 lg can of whole peeled tomato3C cooked of your favorite beans, (I mix gr northern, black turtle and cranberry beans, can also use garbanzos)1 lg red onion (diced)1 lg vidalia or walla walla onion (or sweet spanish) diced2 fresh anaheim chilis (these are sweet and mild) seeded, membrane removed and diced1 lg green bell pepper diced2 lg cloves garlic minced or pressed2, 12 or 1½ 16 oz cans GF beer (or gingerale*)½C GF regular chili powder (I use Penzeys)2T of hot GF chili powder (or omit if you prefer milder chili)1½ tsp saltfresh ground pepper to tasteCouple good blasts GF Worschestershire sauce3 large fresh basil leaves, or 1 heaping tsp dry and rubbed (you can also add a couple whole bay leaves, but they upset DH's tummy)Rince beans, and put beans in a stock pot, cover with 4X water to beans, and bring to a boil. Shut off, and cover, leave on stove overnight covered. DONT OPEN THE LID! (this is the secret to nice tender beans)Drain beans in colander and set aside. Dice your peppers, onions and garlic and cook in olive oil (med hi heat) in your large stock pot till onions clarify. Add your ground meat and brown. Put in your chili powder, salt, pepper and dry basil if using that. Stir well, add your GF beer (or gingerale*) and worschestershire, let simmer. Add tomatos and let cook down. Smash your whole tomatos and if using fresh basil, add now. Let cook for about an hour, adjust seasonings if needed. Add beans, stir well, and if needed, add more liquid. Turn to a simmer and cover. Stir occasionally and let cook all day. Add additional liquid if needed.Cook till beans are fork tender and have absorbed color of chili powder. You can also zip up with your favorite hot sauce, fresh jalapenos or whathaveyou.Serve with Betty Hagman's Cornbread and enjoy!*if using gingerale use a dry one, like Canada Dry or Schweppes.
