I bought a cookie press -- plus I rolled some out and used cookie cut outs. The cookies are great! Austin is one happy little boy. Thanks for the help everyone. a.k.a. Martha Ethel's Sugar Cookies 3/4 cup GFCF margarine 1 cup granulated sugar 2 eggs 1/2 tsp. GF almond extract or 1 tsp. GF vanilla 2/12 cups GF flour blend (I use a mix of 1 cup sweet rice flour, 1 cup rice flour, 2/3 cup potato starch, and 1/3 cup tapioca starch) 1 1/2 tsp. xanthum gum 1 tsp. baking powder 1 tsp. salt Mix margarine, sugar, eggs, and flavoring thoroughly. Combine flour, baking powder, salt, and xanthum gum together; blend in. Chill at least 1 hour. Heat oven to 375 degrees. Roll dough 1/8 in. thick on lightly floured (rice flour) surface. Cut shapes with cooky cutter. Place on ungreased baking sheet. Bake for 6 to 8 minutes. Makes about 4 dozen cookies. Quote Link to comment Share on other sites More sharing options...
