Polenta is a coarse corn meal. When you cook it, it becomes a sort of corn

mush, but when it cools, it sets up into a firmness you can cut with a

knife, and even grill on the barbecue. the final product is somewhere

between a pasta and a bread. Many people eat it while it is still warm and

mushy, as a side dish.
