Maureen Coconut Shrimp From the kitchen of CADDODOC Estimated POINTS® Per Serving | 7 Servings | 2 Main Meals | Community built RECIPE Ingredients 1/2 lb shrimp, peeled and deveined 2 Tbsp cornstarch 1/4 tsp salt 1/4 tsp cayenne pepper 1 large egg white 1 cup flaked coconut Instructions Preheat oven to 400. Combine cornstarch, salt and cayenne in dish. Beat egg white with a mixer until frothy, about 2 minutes. Place coconut in a dish. Dredge shrimp in cornstarch mix. Dip in egg white. Dredge in coconut. Place shrimp on baking sheet coated with PAM. Repeat procedure with remining shrimp. Lighly coat shrimp with PAM. Bake for 20 minutes, turning after 10 minutes. Serve with pineapple salsa. Special Notes Pineapple Salsa... combine 1 cup finely chopped pineapple, 1/3 c finely chopped onion, 1 package Equal, 1 Tbsp finely chopped jalapeno, 1 Tbsp lime juice and 1/4 tsp freshly ground pepper.
