If I had access to the web I could use the collective wisdom to determine that the yogurt is safe. But in an information vacuum, I just see the words " modified food starch " and have no way of knowing what that means. How did you decide to trust modified food starch when you were traveling? Do you always trust modified food starch if there is no mention of " wheat " in the allergen listing? I get the same heebie-jeebie feeling about " vinegar " in a restaurant ingredient listing. How can I know what KIND of vinegar? And textured vegetable protein... Is it corn? Soy? Wheat? In an information vacuum, I have to avoid all TVP to be safe. Other things fall in this category, too. Sometimes I wish I could have a chip implanted so I could have the whole WWW available to me regardless of where I am. I'd be willing to take more risks if I didn't know that even gluten I can't locate will make me miserable for days. If only gluten could have some kind of SUPER NASTY taste or smell so that we could detect even the tiniest amounts before swallowing it.... Wouldn't that be cool? If our SillyYak Super-Senses could detect gluten in that dextrimaltose from five feet away.... Of course, we would end up housebound because of the pervasiveness of gluten. We wouldn't be able to tolerate the presence of friends and loved ones, even though they consumed their gluten in the car. But we could eat more safely! Esther -- " Gratitude must know no limits.
