Isn’t there some sort of Mexican pie…use

the muffins crumbled up as a crust, then fill with chilli and cheese and salsa

etc… ???

Hello Yaks and expert GF cooks,

I made some GF mini cornbread muffins and the batter tasted great and

they tasted great right out of the oven. However, now that they have

cooled, the mini muffins do NOT taste good at all. I have 2-3

dozen mini muffins looking for their purpose.

Any ideas on what I can do with these muffins (besides tossing them

out?)

That's what I was thinking.... There is a frozen something-or-

other made by Amy's that looks like it is topped with cornbread or

something. I'm thinking maybe chili, then topped with cheese, then

crumbled corn bread on top????

Any ideas on how to spruce this one up a bit? (I suppose adding a

dollop of sour cream and some chopped cilantro may do it.... I

know, some of our Yak members think cilantro tastes like dish soap).

Been there, done that, prefer the dish soap.

Seriously, there are thoughts that the cilantro issue has to do with

genetics/taste buds. It tastes like soap mixed with tin shavings to

me. It tastes like a green herb to my husband.

There is a “tamale pie” recipe

in Joy of Cooking that might help, though it wants a batter instead of already

cooked cornbread. I vote for the cilantro. Definitely.

Hillbilly Tacos:

Prepare in layers, serve as a meal:

Cornbread

BBQ (beef or pork)

chili w/ beans (or pinto beans, for real authenticity)

cole slaw

chopped lettuce

chopped tomato

sour cream

Not something to eat often when on a diet, but will definitely cover the

taste of the cornbread. Serve with a LARGE glass of sweet tea (to be

" authentic " - on picnic tables under a ceiling fan, in a disposable large

serving tray). For a little more heat, add some sliced jalapenos (or

chow-chow, to stay authentic).

Yeah - dish soap is better.

Cilantro tastes and smells mostly of very well worn gym socks (unwashed).

There's also the fact that cilantro chelates mercury from the body. My

son (mercury poisoned by vaccines) and I (mouthful of mercury fillings)

both crave cilantro.

Thanks! I think my freezer is almost at max capacity at the

moment... so I was looking for a way to " use them up " quickly.
