A friend of mine gave me the recipe and we love them! 1 cup peanut butter 1 cup sugar 1 egg Mix the ingreedients well, drop on to greased cookie sheet, kind of flatten the dough a little. Bake at 350 for about 8 min.- until they start to turn kinda a tan color- do not wait until they are golden or they will burn on the bottom. So simple, and so yummy! My kids love to help make them. Much to my son's disgust, I've stopped buying Skippy because of the added sugars and oils and now I buy the fresh ground Whole Foods nothing-but-peanuts stuff. It has a drier, coarser texture and no salt, so I'm wondering if it will work as well as the commercial premade stuff. It will be healthier with the whole foods stuff! Maybe adding a little oil would help, I am pretty sure most of the commercial ones have oil in them. There are some pretty skilled cooks on here, I bet one of them would have some good ideas! Maybe seamadden? There various modifications you can do (not necessarily all at once): Add a baby food jar of prune puree or 1/4 cup of applesauce. Use 2 eggs instead of 1. Use brown sugar instead of white. Anyway I make them all the time with Trader Joes' peanut butter. I just make sure it is well mixed or chilled. I also add 1 cup chocolate chips, they end up tasting like a Reese's peanut butter cup. The recipe I have also has 1 tsp baking soda added. They come up nice and fluffy.
