Guest guest Posted May 13, 2006 Report Share Posted May 13, 2006 In honor of Mother's Day, I am contributing this recipe for GF Coffee Cake that is so good, it tastes like the Cinnamon Creme Cake they sell at Corner Bakery (I promise!). I use Bob's Red Mill All Purpose GF Baking Flour and can't vouch for anything else because I've never tried anything else. In a large bowl whisk together: 2 cups Bob's Red Mill All Purpose GF Baking Flour 1 T baking powder 1 t. Xanthan gum 1/2 t. salt 1/4 t. ground nutmeg In another bowl whisk together: 2 large eggs 1 cup milk (or goat, soy, or rice milk) 2/3 cup sugar 1 stick melted butter 1 t. vanilla In a small bowl combine: 2/3 cup Bob's Red Mill All Purpose GF Baking Flour 2/3 cup sugar 5 T. melted butter 1 1/2 t. cinnamon 1/4 t. salt Add the liquid ingredients to the dry ingredients and mix until just combined. Do not overmix. Pour half of this batter into a greased 9x5 loaf pan. Crumble half of the cinnamon sugar mixture all over it to make a layer. Pour the rest of the batter and spread it a little to cover the cinnamon layer. Top with the rest of the cinnamon sugar. Bake in a 350 degree oven for about 40 minutes. Just cut it out of the pan as we eat it? Or do you take it out of the pan...and if you do that, how do you keep the topping on it? I used the 1C Bob's all purpose I had left and 1C of Naomi Poe's flour mix. Also, Equate brand acetaminophen and Equate brand ibuprofen are GF. You need to call Perrigo each time you buy them, but I have not found one that is not GF yet and we have been using them for eight years. They are found at Walmart. We live in Kimberling City, MO and I lead a support group there. We are in Hawaii for six weeks visiting our son and his family. I removed the pan and it was sitting on the cutting board upside down. Then I cut it into slices. Since I sliced it upside down, the topping gets cut without tearing up the cake-y part. Then I just wrap up the whole sliced loaf in plastic wrap.
