I think they are just GI disturbances because when you have a lactose intolerance you lack the enzyme to digest lactose. It is my understanding that people with lactose intolerances can consume dairy if they take lactase, the missing enzyme. however, if you are casein intolerant or allergic your body sets up an immune reaction to the protein in the milk and the only treatment is complete avoidance. I had an accidental dairy ingestion last week. I got tarry stools, flatulence, extreme fatigue, dreadful stomach cramps, unexplained anger and joint painl. I use coconut milk as a sub for regular milk in some things and not others. I use a combo of rice milk, almond milk, darifree and coconut milk. I use coconut cream instead of regular cream. I make rice pudding with coconut milk and use it in curries. From what I understand, lactose reactions tend to be more immediate and more along the lines of gas and gramping. Casein intollerances tend to have similar delayed reactions as gluten and effects more than just the GI tract. I know I get migraines from both gluten and casein. Last time I accidentally took a pill containing lactose (no casein), I had a fairly immediate allergic reaction but the reaction was gone within a day. Casein reactions linger for me. You can test it with a soy cheese that contains casein. They're generally free of lactose but still contain casein so you'd know what you're reacting to if you react. I don't use coconut milk very much. I've used it a few times ok in creamy sauces or soups but I'm not sure about in baking. I successfully use coconut oil/butter in baking. The first awful experience I had was when I was about four and was forced to drink fresh cows milk on a ranch with other kids. The reward was ice cream, when they all finished they got their reward. I sat for hours until I was able to finish it. It took me this long due to trying to hold it down...well need I say it did not work at the end. I felt triumphant, but defeated, as there were no more ice cream as the kids got it all, just as well I probably would have gotten sick again. I got a lousy hard strawberry lollipop, I don't care for lollipops much these days. Ha, Ha... I never suspected Casein as I tolerated homogenized milk...enough. I love rice pudding but stopped having it because I could tell my body did not care for it. I will try to make it again but this time with coconut milk. Is this your own personal recipe?
