Someone turned off the heat around here. Turned very cold - 30's

early in am and 50's for a high. Having a little Indian summer, I

guess. Good walking weather.

FlaxOMeal - .5 (had a 1/4 c. cereal instead of 1/2 c. this am)

tuna salad - 2

salad - 6

beef jerky - 2

smoked salmon

salad - 6

cream cheese pie - 6

lots of water

did strength training in am

walked 2 miles in pm

What is cream cheese pie and how do you make it?

Cream Cheese Pie ( I do not always follow a recipe)

1 1/2 c. almond flour

1/2 c. unsweetened coconut

2 pkg. Splenda

1/2 stick butter, melted

Mix and press into a pie pan (I use a 10 inch)

Bake at 350 for 15 minutes. Let cool.

2 pkg cream cheese, softened

2 tsp. vanilla

1/4 c Splenda

1 c. heavy cream

I like to use 1/4 c. of a Splenda-sweetened flavored syrup

instead of the vanilla and 1/4 c. Splenda. Lessens the carbs, too.

Beat the cream cheese and flavoring and sweetener until smooth. Whip

the cup of cream until thick. Mix them together. Pour into the cooled

pie and refrigerate.

I count 16 g for cream cheese, 6 g for splenda, and 6 for cream. It

ends up being about 4 g per serving - less if not using Splenda.

I use one of the Jok'n Al toppings for added flavor. Could toast some

coconut or use Twist or Steele's Fudge Sauce. Oh dear, getting hungry
