Guest guest
I make a really good spice cake (you could probably make them into cupcakes). I use one spice cake, 15 oz of Pumpkin, 1 FF Yoplait Vanilla yogurt. Mix all together put in at 13x9 cake pan that has been sprayed with Pam at 350 for 40 mins. Cut into 12 squares...2 points each. Stanton wrote:So are you mixing the cake mix as usual? Or just adding the pumpkin? I know, dumb question, but I wanted to be sure because if you are making the cake mix up, couldn't you substitute applesauce or baby food prunes for the oil to further reduce points? Re: tailgate Well...does it have to be meatballs? Because it doesn't matter how you cut 'em, meatballs are gonna be fattening unless you get 4% lean ground, mix it with some mushrooms and onions, throw in some nonfat/lowfat cracker crumbs, and simmer in a marinara. That wouldn't be so bad. What are some other options... You could cut up lowfat or nonfat hot dogs and simmer them in a low sugar BBQ sauce, or make your own funky sauce. Of course you could do veggies...that's what I would do, and no one but my husband and I would eat them, but at least I'd know I had something healthy to eat. You could do pumpkin spice muffins, easy as cake and they're 2 points a piece. Just mix a can of pumpkin with a spice cake mix or vanilla mix but add some spices (pumpkin pie spice). Bake. Make 32 small muffins. They're awesome.
