I haven't been eating any fruit yet. Previously on another attempt at the diet,

I tried some apple sauce. However, I think I tried it too soon (day 2 of

intro). That always seems to be my problem. This time around I am dedicated to

take it slow. I think I will stay away from the fruit for a little bit and try

some zucchini(well cooked, de-seeded) and see how that works. Thank you for

sharing what you are doing. It helps greatly!

This product is not legal. It's made with skim milk. Ingredients: Pasteurized part skim milk, sesame seeds, poppy seeds, garlic, minced onions, cheese cultures, salt, enzymes. Katy

Sorry, but I have to question apples: one apple may contain 27 gram of carbs according to some sources. I guess it all depends on the brand of apple.

I am very careful with apples for this reason.

I’d stick to Granny apples. I think they are the

lowest carb among apples.

Katy-

Actually, they are all legal--they are all made from cheese that is made with skim milk, (parmesan, in fact.) The cheese cultures get rid of the lactose, just like in any aged cheese. All of the KTB gourmet wafer crisps are made from cheese and the ingredients that are listed on the label. If you look at the carb count it is less than 1 gram--skim milk alone couldn't post that.

I had checked with Marilyn before buying to just make sure they were legal. I was pleasantly surprised with how good they are. They are great for me for bringing to work--very convenient.

They taste great and are a wonderful (expensive) cracker-like food that really tastes like a cracker. My favorite is the Everything and the Jalapeno flavor. I found the original to taste too much like strong parmesan cheese and was better with something on it--like my white bean hummus, but I liked the above mentioned better.

Thanks for the list. I will keep this in mind as I slowly introduce things

while following the stages as best as I can.

It is exciting!! You can order them on amazon or directly from carbsmart.com ( I knew you guys wouldn't believe me unless I invoked Marilyn's name!) Enjoy!! Some Whole Foods carry them--call ahead to check, mine didn't. King's is only authorized to carry 3 flavors--original, sesame and garlic.

PS--didn't like the original or the sesame by themselves, or with anything on them. The best tasting ones to me were 'everything', jalapeno, and garlic. Those were great with DCCC and smoked salmon, yogurt cheese and caviar (!), white bean hummus spread ( homemade), etc. The 'everything' tasted just like a cracker to me plain. They are 80 cal for 3 with less than 1 gm carb. Fantastic.

Strawberries low carb? That’s new to me. I’ve always read they’re

high carb. And apples can be as well, depending on the type of apple. Certainly

red delicious are.

Oh, I'm still saying make your own -- 'cause in this case, it's WAY

cheaper. However, I've tried these, and haven't reacted to them (which is

a grade A miracle, since I react to darn near anything commercially

made).

Eileen,

Marilyn did say to make my own--and it is my next project. But, it is a treat for me and my Dad wanted to do something for me. Which, as an aside, if you see something expensive you want that is legal but you cannot afford, this is something to put on your holiday wish list for family and friends to give as gifts. For example, last Kwanzi-mas-kah, my sis and Dad chipped in and bought me a bottle of the legal 12 year aged balsamic vinegar, which I could have never justified buying for myself and it was a special, much appreciated gift. Just a suggestion.

I did not see rennet on any of the labels, I just looked--so perhaps you were looking at something else? The only one I would not eat is the Flax seed as I believe flax seed is illegal--someone please correct me if I am wrong.. but I know it is high in lignin which is a no-no.

It can be challenging determining exactly what foods are low or high in carbs/sugars as many lists of fruits and vegetables vary in their analysis. When I compiled the lists that are in our group Files I put foods in the category that the majority of experts put them in.

Of course, things change depending on the variety of the fruit and vegetable, the time of year the food was grown, how ripe it is, and so on. The lists are only guidelines to the average amount of sugars/carbs, etc. found in foods.

Remember, paying attention to your own body's signals is often the best way to figure out what works for you at whatever stage your healing process is in.
