I'm no expert, and goodness knows I do NOT have a reputation as a

stellar cook by any means... but with that particular recipe I would

just take one of the all-purpose gf flour mixes and plow forward with

aplomb and confidence. I'm thinking Bob's Red Mill All Purpose GF

flour mix. I wouldn't try the Gluten Free Pantry Quick Mix - that

one is more like Bisquick and less like regular old " flour " . The

BRM All Purpose Baking Flour works a lot like regular old " flour "

in recipes that are not more specific than just the simple

word " flour " .

Congratulations to you for your adventure and feedback.

I can't tell you the last time I did something new like that.

You are an inspiration to me. I will be more courageous next

time. I will think of Coleen's funnel cakes next time I'm nervous

about something new.

And how much of a bribe from a sticky-faced grandson would it take,

any way? Extra hugs and kisses? Or was it so much work that they'll

have to bid as high as 3 mown lawns and a garage cleaned out?
