Hi Jodi - I don't know of any legal organic yogurts. I also use Fage, and then add in some acidophilus from the GI Pro Health SCDophilus capsules (I use about 4 capsules per half gallon of milk). For the starter, use 1/4 cup of starter for each quart of milk, so 1 cup of starter for a gallon of milk. The small Fage containers are 7 oz, so not " quite " enough for one gallon per the BTVC instructions, but it's probably close enough. I try to use the Dannon whole fat plain yogurt if I can find it since it already has the acidophilus in it - but again it's not organic either.
