Guest guest Posted December 11, 2005 Report Share Posted December 11, 2005 Winter Vegetable Ragout. 2 red onions sliced 4 cloves chopped garlic ,2 tablespoons butter 11/2 cubed Winter Squash 11/2 broken up cauliflower.......can add more as it breaks down a lot 11/2 packed ,sliced winter greens ,such as chard red or green or Kale 2 long Carrots sliced 2 tablespoons of Chopped Fresh thyme 4 cups vegetable broth 1/2 cup tomato paste salt and pepper to taste in a large heavy pot melt the butter. When butter just barley starts to brown,add the onions and simmer on medium -low heat for 10min to caramelize.Add the tomato paste and let it heat for about 3 minutes.Add stock and the rest of the vegetables except for the greens and let simmer for 40 minutes on Medium-low heat until vegetable are tender and liquid has thickened up a bit.Turn off heat and toss in greens and the thyme This makes quite a bit but i can eat cups and cups of it and its better the next day and freezes well and makes for a quick vegetables can be added to the SBD recipes ------------------- Lynne Underwood Walnut Creek, CA ludogs@...
