I'm wondering whether I should use crumbled fat-free feta cheese in place of the large curd cottage cheese I got. The search not only served up your original recipe, but also all the discussion of it, and it seems that the real " parsi " is drier than American cottage cheeses, and the fat-free feta (if not regular feta) is pretty dry, though it's Greek, not American. (Also, FYI and parenthetically, there's a sheep's milk feta that's sold at Whole Foods that is really fantastic! While I was " being bad " during the Christmas holidays, I got some and devoured it in one sitting.) (Maybe that's why my jeans are tight now.) Question: I had thought that " curry " referred to a combination of Indian spices, which, when mingled together produced that flavor we know of as " curry, " such as a mixture, of, say, cumin, coriander, turmeric, chili, cayenne, and paprika, for example. And that there were all different kinds of curries. So, what is a CURRY LEAF?????? Maybe I'm wrong. Is there a particular spice, just, in and of itself, that is called " a curry? Another recipe just combines peppercorns, cumin, coriander, ginger and turmeric. I have never heard of a " curry leaf " .
