What to eat, what to eat....

Last night I made up the creamy cheesey spinach recipe I posted a few weeks

back (see the files area). Basically, it's spinach, cream cheese, parmesan

cheese, and onion. Turned out to be pretty good. Of course, there were

leftovers. :)

I also recently made up some cole slaw (again, see recipes in the file

area). Now, my cole slaw tastes an awful lot like KFC's and personally I

think it tastes much better. Again, ample leftovers.

So, I'm workin' on what to eat today. Don't feel much like cookin a big

production so I hit the fridge and the freezer.

First off, there's the creamy cheesey spinach. I pulled out a few heaping

tablespoons of it and nuked it to warm it up.

Then I pulled out a Dr Praether California Veggie Burger which I added to a

coupla slices of whole grain bread with a bit of shredded cheese and mayo.

That worked out pretty good for a breakfast.

A while later though, I had a bit of a hankerin' for flavor. True, I was a

LITTLE hungry, but we're talking snack level here.

Out came the cole slaw. :) There was about a cup or so left -- the perfect

snack.

Now, lunch will be coming up in a couple of hours or so and I think I'll do

a big ole salad with lots of spinach in it for the greens. I might just

pull out a bowl of my vegetable soup (or maybe some minestrone!) to go with

it, turn the salad into a side salad.

I haven't quite decided on what to make for dinner this evening. To be

honest, I'm kind of in the mood for a vegetable stir fry, maybe over a

little rice, so that will probably be the answer. Got stuff going on this

evening so.... :)
