Dinner on the beach (South Beach that is)....

Feeling a bit on the lazy side for dinner this evening so I decided to go

with what I have here and cook up some chicken. Thing is, I needed a bit

more to go with it. For starters, being lazy, I pulled 3 frozen chicken

breasts out of the freezer and put them in a glass dish in the microwave to

thaw 'em out. So began the pondering....

Chicken. What to do with chicken. You can bake it. You can fry it. You

can nuke it and toss it between two slices of bread.

Nah. Too...welllll...simplistic. :-P

I'd love to do a chicken parmigiana, it's been a while after all, but darn

-- I'm out of bread crumbs and don't have any shredded parmesan.

Hmmmmm.... What about a bit of a hybrid dish?

SO, here's how it went.

Step 1: Realize I do not have any cheese thawed. Send wife to grocery store

around the corner to get some shredded mozarella and shredded parmesan. Set

oven to pre-heat at 400 degrees.

Step 2: Start pasta sauce.

First and foremost, I chopped half a large onion and put the chopped onion

in a 2 quart saute pan with olive oil. Then I carefully sliced 3 large

cloves of garlic and added them. Finally, I took about one and a half large

cans of Dei Fratelli Crushed Tomatoes w/Basil & Herbs (no salt added, BTW)

and added them to the mix.

Ok, sauce is underway -- simmer and stir occasionally. Now on to the

chicken.

Step 3: Pre-cook the chicken.

I cut the chicken breasts into 3 slices each and into a skillet of olive oil

they went. I cooked them up along with a good drenching Mrs Dash Table

Blend.

Step 4: Wife returns with cheese, time to assemble the dish.

I put the slices of chicken in a 9x13 baking dish, spreading them out. Then

I poured the sauce over top of them and made sure that ever piece was

covered top, bottom, and sides with sauce. Next came the parmesan -- a

liberal application, of course (maybe a cup). Finally, the mozzarella made

its mark -- about 2 cups. Foil over the top and into the 400 degree oven

for 20 minutes.

In the meantime, it was time to start the water boiling for some pasta.

Step 5: Pick out some pasta, get it cooking.

This was a bit on the difficult side because, to be honest, I didn't know

WHAT I had in the pantry. I was looking for something along the lines of

bow tie pasta. Failing that though, I ended up going with some whole grain

spirals. When the water was boiling, in went the pasta spirals.

Step 6: Time for the finale.

After the 20 minutes were up, the baking dish was pulled out and put on top

of the stove to cool a tad (uncovered, BTW). After another 10 minutes or

thereabouts, the pasta was done and it was time to eat.

I suppose I spent about an hour in the kitchen working on dinner this

evening but it was good stuff and SBD friendly (P2 with the pasta, of

course).

I did one on Sunday. Phase 2

Placed 4 beef patties (90% lean) in crock pot.

Dumped in can of V-8 juice.

Added a couple handfuls of baby carrots

Dumped in can of French-cut green beans (water and all)

Added fresh ground pepper

Put in a little basil

Let it go for several hours.

Prep time - all of about 10 minutes.

Sure tasted mighty good, and filled the house with great smells.

In my humber opinion (IMHO), I think these type of dinners are the best!!
