These are some recipes I found while doing a search.. For anyone who

is brave enough to take the plunge and try one.. I had never tried

making a veggie muffin, but I believe this could be a starting point..

I think I might try these myself...they do sound good don't they..but

we need to figure out the points, since nothing is listed..

This recipie came from the trim kitchen cookbook it is very filling

and they are great cold or reheated for 20 seconds in the microwave.

Veggie Muffins

2 cups self raising flour

4 tablespoons grated vegies ( 1 zuccihi,1carrot,1 potatoe,1capsicum)

125g tin corn kernels 1 cup skim milk

2 eggs beaten

shake of parsley or dried herb

1 teaspoon seeded mustard

Place all dry goods into a bowl,make a well, add eggs and mustard

and veggies ,mix lightly gradually add milk,this is supposed to be

lumpy so dont overwork dough.

divide mix into six large muffin tray,or six muffin cases bake at 180

for 25 mins.

Beth's No Fat Fruit Cake

Ingredients:

1 cup mashed, cold pumpkin

4 egg whites (frozen is ideal)

250gm wholemeal Self Raising Flour--(not sure if this should

read " wholewheat " )

1 teaspoon mixed spice

1 teaspoon bicarbonate soda

125gm each raisins, mixed peel, chopped dried apricots, sultanas

1 tablespoon honey

1 cup fresh orange juice

Method:

1. Combine fruits, orange juice and honey in a saucepan and bring to

the boil, remove from heat, add bicarbonate soda and allow to cool.

2. Thaw egg whites and beat lightly. Combine cooled fruit and pumpkin

with flour and spice and beat till smooth. Add egg whites and stir

lightly to combine. Pour into a lined 20cm tin and bake at 165C for

1½ hours.

Low Fat Banana Fritters

Ingredients:

1 cup fresh breadcrumbs

1 tablespoon brown sugar

1 ½ teaspoons cinnamon

4 large bananas, peeled

serves 4

Method:

1. Combine breadcrumbs, sugar and cinnamon

2. Line a baking tray with baking paper

3. Halve bananas and toss gently in breadcrumbs, pressing in gently

to coat.

4. Place bananas on baking tray and bake at 180C for ten minutes or

until golden.

Serve with low fat ice cream or custard
