Hi...

My supper for tonight was..

Marinara sauce cooking in crockpot all day

Added to that soy sausages, last two hours of cooking

Udon(brown rice noodles)

Spaghetti squash, mixed with smart balance margarine and freshly grated

parmesan cheese

Large salad with everything in it.

Greek type dressing, oil, vinegar, oregano, etc.

Dinner tonight is taco salads with all the yummy fixin's. No roll-ups for

me because I am still in phase 1.

I need some new ideas!

I happened to run accross this recipe today on the back of my Kraft

2% shredded cheese, it is a SBD recipe so I guess we will try it

tonight.

Well, I decided to go with the burrito option for dinner tonight. For the

family -- ground beef and taco mix with refried beans, sour cream, a cheese

bland, lettuce and fajita wraps (wife changed hers up a bit and used Fritos

-- it's her thing). For me, a vegetarian crumble with tacomix and whole

wheat wraps.

End result was pretty good; satisfied a craving too. :)

For the vegetarian crumble, I decided to try a product I've been a bit on

the fence about -- Quorn. Quorn is a meat free product made primarily from

a type of fungus that is fermented to grow then harvested. The crumble

worked remarkable well; I had to add a little more water to the mix since it

didn't have the benefit of the fat found in ground beef, but it tasted good.

I sauteed some onions for it as well, just to add a little more flavor.

This Quorn is an interesting product. On the one hand, it may not be SBD

friendly simply because of the fermenting process used to grow it. The

label does not list any substantial sugar (.5g per 2/3rd cup serving) and it

comes along with 5g of fiber per serving, so I think I'm gonna call it an

SBD friendly enough product. :)

Salisbury Steak, braised cabbage, broccoli:

Salisbury steak

6 cube steaks

garlic, salt and pepper to taste

1 big onion, chopped

2 TBS low sodium beef bouillon or 2 cubes

1 TBS olive oil

Water

Season the cube steaks with garlic and pepper.

Brown the cube steaks in the butter and add the onions. Add enough

water to cover. Add beef bouillon

Cover and simmer for 45-60 minutes or until the water is almost gone.

Taco night turned out great. I used ground turkey for the meat and my

neighbor brought lots of fixins. Turned out great.

I'm not sure if your question was directed at me but I didn't use a taco

shell because I am on P1. I just made mine into a salad. But if you are in

P2 or P3 you can use whole wheat roll ups or any whole wheat pita bread.
