We couldn't think of anything to make for dinner this evening so my wife decided to go simple and pulled out a couple of boxes of Tuna Helper. She wanted to make it up for her lunches this week and figured she and the kids would just have a bowl as well. This gave me a bit of an idea. I was kind of in the mood for the alfredo Tuna Helper, it sound good, so I decided to make my own. First off, I made my alfredo sauce. It tasted great. I made up some whole grain pasta and combined the sauce and pasta with a can of low sodium tuna. The end product? A home made version of Tuna Helper's alfredo and noodles meal. It was pretty tasty too, if I do say so myself. The batch I made up would yield about 10 servings. The extra cup of parmesan cheese cost roughly 3g of fat per serving (right about 1.5g of that being saturated) and 140mg of sodium. For that reason, you might want to try it with just 1 cup of parmesan -- it tastes good that way as well. Here's some box scores for the meal, sauce/tuna/pasta included.
