simple and good:

Roasted Brussels Sprouts with Roasted Garlic

1 pint brussels sprouts

1 head garlic

1 tbsp olive oil

sea salt

preheat oven to 350

cut off top of garlic

drizzle 1/2 tbsp of olive oil over garlic head

wrap in aluminum foil and stick in oven (before preparing sprouts!)

trim sprouts and cut in half

arrange in shallow baking dish (glazed ceramic or nonstick is best)

drizzle with remaining olive oil and salt

set in over for 35-40 mins (longer if you like crispier leaves)

remove both from oven

squeeze roasted garlic cloves over sprouts

toss and enjoy!

Ok...so changing the subject here. I'm starting to get into a rut (making the

same meals over and over) which usually spells disaster for me. So tell

me....what was your favorite SBD meal from the last week? Have you tried

anything new and interesting lately? Give me your most unusual veggie

preparation (preferably that turned out great!).

Me too! I'm eating about $10 worth of Baby Spinach a week!

Yesterday at Pathmark the bag I bought rang up at $3.49 and I knew the shelf

price was $3.29. I had the clerk check and sure enough I was right. They gave

me the bag for free!

Oh I have got one!!!

SB Taco Bell Taco Salad

1/2 can of FF vegitarian refried beans

1/2 C FF jack and cheddar cheese cubes

Salad mix, cukes, tomato, onion, ect.

Salsa

In a small caserole dish use 1/2 can of refried bean, spread evenly.

Top with cheese cubes. Nuke for 1.5 min.

Top with salad. Spoon on salsa.

This is just like the ones at Taco Bell, just dont try to eat the bowl!

I have been on a spinach pie kick. My husband likes it too so that is an easy

to go breakfast for him as well. I don't count it as a veggie though as one

slice really does not equal a veggie serving...at least not for me.

I also made the cabbage salad from the first book and I really liked that.

Next time, I will blanch the cabbage first.

I made a veggie recipe from the show Blanes low carb on fit TV....see below.

I just made the veggie part, I did not have the meat on hand. This I will

make again!

Basically I like my meals simple. I did buy a remade pico de gallo sauce last

week. I loved it over grilled salmon. It took 5 minutes...cook the salmon,

squeeze a little lemon on it and quickly sauté in the pico.

1 lb. boneless chicken tenders - frozen

1 lb. boneless pork chops - frozen

1 12 oz. bag fresh pre-cut broccoli

1 12 oz. bag julienne vegetable mix (carrots, broccoli, cauliflower & cabbage)

(note: if using frozen vegetables be sure to allow moisture to evaporate before

cooking)

1 6 oz. container whole button mushrooms

5 tbsp. peanut oil

1 tsp. salt

1 tsp. pepper

2 tbsp. soy flour

4 tbsp. soy sauce

2 tbsp. chopped garlic from jar

2 tbsp. sesame oil

1 tsp. crushed red pepper

1 tbsp. roasted sesame seeds

Push frozen chicken and pork through food processor using single slice disk

attachment with machine on pulse. Take sliced meat from processor and place 1/2

of meat mixture in a gallon plastic bag. Toss with 1/2 tsp. salt and 1/2 tsp.

pepper then 1 tbsp. soy flour. Shake to coat. Repeat with second batch of meat

mixture. Preheat 12 " non-stick skillet or Wok to medium high. In batches so as

not to crowd, stir fry meat mixture with 1 tbsp. peanut oil and transfer to

large serving platter (approximately 3 batches which will require 1 tbsp. peanut

oil for each). Takes 1-2 minutes for each batch.

Remove cooked meat from pan and set aside. Add 1 tbsp. peanut oil to pan with

broccoli and julienne vegetables. Cover skillet with lid 3 - 4 minutes. Remove

lid and stir fry by tossing consistently for 1 minute. Clear area in center of

pan with spoon and add garlic and red pepper - cook 1 minute. Toss and then add

mushrooms, soy sauce, sesame oil and stir fried meat back to pan. Cover and heat

2 - 3 minutes. Turn off heat and transfer stir fry to large serving platter and

garnish with roasted sesame seeds. Serve immediately.

That is my favorite breakfast recipe. I wish I could find another

that I like as much. The rest of the quiches are okay, but not great

like the spinach pie.

things to make in the morning. Does anyone have suggestions on how to make it a

little less bland?

Enid -- Nothing says you have to eat " breakfast foods " for your first meal

of the day. Eat anything you like that conforms to the diet; I eat

leftovers all the time. One of my favorites is to nuke a bowl of home made

soup.

I know. There have been many a morning that I have had a salad with Tuna for

breakfast but I am really enjoying the process of cooking and finding new things

to eat. I loved the spinach pie as you could make a pie and have it for a quick

breakfast for the week. Now I want to make it a little more tasty.

of the day. Eat anything you like that conforms to the diet; I eat

Ahhh...I thought you were speaking in general.

Well, let's look at the recipe for the spinach pie. Is it this one...?

Italian Spinach Pie 1,2,3

1 16-oz container low-fat cottage cheese

1 10-oz frozen chopped spinach, thawed and well drained

1 c shredded reduced fat mozzarella cheese

1 c eggbeaters

1 7-oz jar of roasted red peppers, well drained, chopped

1/3 c grated lowfat parmesan cheese

1 tsp oregano

Preheat oven to 350 degrees.

Mix all ingredients until well blended. Pour into 9-inch pie plate that has

been sprayed with cooking spray.

Bake 40 minutes or until center is set. Eat 1/4 quiche for braekfast each

day.

Now, if it were ME, I'd reach for the herbs myself. You can buy " Italian

Seasoning " which is usually a mix of oregano, marjoram, rosemary, thyme, and

sage. I'd drop the 1 tsp of oregano and try 1 to 1 1/2 teaspoons of Italian

seasoning, see what that does to the recipe.

Another thing to try -- switch up the cheese. Use an Italian mix or other

types of cheeses that you like. Try monterey jack and cheddar, for example.

I don't notice it being bland, but I guess you could add a can of mild

green chiles or some hot sauce.
