What, > other than salads, do you make that's QUICK? Not really. :-P I can't begin to count the number of times this has happened to me. My favorite quick meal is a salad just because it's so easy. Funny thing, it's not the quickest meal I can put together! What I had this evening is probably the quickest and simplest meal I cook -- whole grain pasta with a tomato sauce and sprinkle of cheese over top. My spaghetti sauce is home made, of course, but it comes together in something like 5 minutes. The pasta takes nothing to put together either. I'll bet it didn't take me 15 minutes to put the whole thing together. Another super quick and easy meal is a vegetable stir fry. A little oil in a wok, saute some onions and garlic, dump in a bunch of frozen vegetables. Short, sweet and simple. When it's done, you can toss them all in a bowl and put some shredded cheese over top for added flavor. My wife's favorite quick meal is similar. She'll make some pasta, give it a dollop of butter, then mix in some vegetables (usually carrots, broccoli and cauliflower). Another quick meal -- sandwiches. Before going strictly vegetarian again, I'd pull out a couple of chicken patties or beef patties and cook them up in a skillet. This would go on a couple of slices of bread and be dressed with onions, tomato, lettuce, mayo, cheese and who knows what else. Here lately, I'm finding a veggie burger an adequate substitute. Lastly, you can always do steamed veggies. Just dump some frozen vegetables into a steamer and leave 'em be for a while. SO, there's a coupla ideas. Invest in the new 30 minute cookbook. It was a Christmas gift from my DH (at my request). I went through it and I know that I marked at least 2/3 of the recipes to try. Guest guest Posted January 22, 2006 Report Share Posted January 22, 2006 Something both my kids will eat (an amazing feat in itself!) and super easy - cut up boneless, skinless chicken breasts. Cook them (I use olive oil to cook them in). Add one can of drained and rinsed black beans and a jar of salsa. Heat through. My daughter and I top ours with cheese and sour cream, my son eats his plain. Amy what is hardest I think...... I am so sick of thinking up meal ideas everyday. It really helps me to plan menues for the entire week and shop for all the ingredients at once. Guest guest Posted January 22, 2006 Report Share Posted January 22, 2006 Hi , An omelet and a couple slices of turkey bacon would work. Or a sandwich. Or tuna on Wasa rye crackers. Or maybe even make up in advance some feta stuffed chicken burgers or chicken breasts " breaded " with parmesan cheese or hamburgers, wrap them individually, freeze them and pull them out of the freezer when you want something quick. You can also make a pot of soup on a weekend, freeze it in individual servings and pull one out when you need to.
