Dh and I take turns making these on Sunday mornings - he makes the pancakes and I make the waffles and I always double the batch of waffles to freeze for future use (then I get a Sunday off sometimes by just popping them in the toaster oven!). --Cheryl I did a search for whole wheat pancakes and this one came up as whole wheat blueberry pancakes on HungryMonster.com (a fun site). Obviously you can leave the fruit out or add other (smashed banana, blackberries, chopped apple, etc). Cinnamon is a good addition with apples and I've also varied it by adding nonfat buttermilk for some of the plain milk. Mix together in a medium bowl 2 c. whole wheat flour 2 tsp baking powder Beat in 2 c. nonfat milk 2 eggs 1 Tbsp oil (I substitute 1-2 Tbsp flaxseed) Stir in 1 c. blueberries (optional) Lightly oil frying pan or griddle (we use a nonstick griddle and don't need to oil) and spoon out batter. Some tips: Cook over medium heat and don't flip until the bubbles on the top pop and it starts to look dry. Sometimes the first ones stick anyway so those are dog treats! Recipe says this serves 12 (people or makes 12 pancakes?) but it varies as to how large you make the pancakes. We have 4 in our family including a 7 year old who may or may not eat a lot and a 91 year old who may not eat a lot in the morning but then loves to snack on the leftovers during the day. ************************************************************ I usually double this so I have a lot to freeze for later - much better than Eggos (or whatever they're called)! This is the original recipe and then I make substitutions and add other things, too, like oatmeal or pecans. 2 ¼ c. whole wheat flour (sometimes substitute ½ - 1 c. whole wheat pastry flour to make them a little lighter) 4 tsp baking powder ¾ tsp salt (don't add this) 1 ½ tsp sugar (don't add this) 2 beaten eggs 2 ¼ c. nonfat milk ¼ c. vegetable oil (substitute flax seed meal) Mix together and cook according to your waffle griddle instructions.
