I cooked, and cooked foods that I don't eat, but it is a Holiday, and wanted all friends to be able to share in it. I ate the turkey, sweet potatoes, broccoli, and large salad. I did not eat mashed potatoes, lasagna, or any of the stuff not SBD friendly. I made a pumpkin pie for guests and a crustless one for myself and another person on SBD. Also had jello and whipped cream for those on WW or other diets. All in all, I was satisfied. Holidays are doable. I have a friend that was moaning and groaning yesterday about being on a diet and can't have this or have that, but everyone tuned her out, and she stopped. I was just thankful I had food on the table and was surrounded by so many of my good friends, where I do not have family here in FLorida.It truly, was a wonderful day. The only things I ate that I shouldn't have were 1 roll and 2 Hershey Kisses. So overall I thought that was pretty good! I don't even know if I would cook any non-SBD friendly foods. I figure they ate that at Thanksgiving, so I can make what I want for this dinner. I always take my son out to eat for his birthday. My sweet little boy says he wants to go somewhere and get seafood because he figures I'll be able to find more that I can have! It helps when you are the only one cooking so they are at your mercy if they want to eat....LOL The only complaint I got was no mashed Potatoes. I fixed Turkey, Brown Rice Stuffing, Duchess Sweet Potatoes & Apples, Baked Brussel sprout casserole, Broccoli, Green Beans and a Large Green Salad. We had Libby's Pumpkin roll with modifications for dessert. It turned out wonderfully. I'll post recipes if anyone wants them. Guest guest Posted November 26, 2005 Report Share Posted November 26, 2005 Libby’s SF Pumpkin Roll Cake Ingredients: 3/4 C Whole Wheat Flour 1/2 tsp Baking Powder 1/2 tsp Baking Soda 1/2 tsp Cinnamon 1/2 tsp Cloves 1/4 tsp Salt 3 Lg Eggs or Equivalent eggbeaters 1 C Splenda 1 C Pumpkin Filling Ingredients 1 pkg (8oz) Cream Cheese, softened ¾ C Splenda 6 Tbsp Butter, softened 1 tsp Vanilla 1) Preheat oven to 375. Grease 15â€x 10†jelly-roll pan; Line with wax paper. Grease and flour paper. 2) Combine flour, baking powder, soda, Cinnamon, cloves in small bowl. Beat eggs & Splenda in large bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly in prepared pan. 3) Bake for 13 to 15 minutes or until top of cake springs back when touched. Immediately loosen and turn out onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack. 4) Beat all filling ingredients until smooth. Carefully unroll cake spread with Cheese. Reroll cake. Wrap in plastic wrap and chill Duchess Sweet Potatoes & Apples Ingredients: 6 lbs Sweet Potatoes, peeled, cut into 2†pieces 2 Gala Apples, Peeled, Cored, cut into 2†pieces ½ tsp Dried Sage ¾ tsp Salt ¼ tsp Pepper ¼ tsp Ground Nutmeg 1 tsp Cinnamon 4 Tbsp SF Maple Syrup ¼ C Butter, melted Directions: 1) Add all ingredients into the Crockpot. Although, sometimes, when faced with such an array, I just get overwhelmed and decide to be good. But you were ARMED with your own! That takes real commitment! And dedication to doing it! Making it first! WOW! If I were to have gone to that length to be good, then I would have been good. In my case, since I'm gearing up to START SBD, I decided not to worry too much this time around. I cooked myself. My best friend has a strange neurological disease which creates calcium deposits on her nerve endiings and can be very painful, and she can't eat certain foods, such as sweet potatoes, so I ended up serving yams instead. But the rest of the meal was fairly SBD. I served a chocolate bean cake. No one dared taste it. Just as well. more for me. Heh. Except this one (my second attempt) had too much Splenda in it, I think, I will keep trying 'til I get it right. Oh -- I forgot -- I also made a sinful cranberry relish and I won't even tell you what's in that, and served cranberry sauce. I'd asked another best friend to bring an apple-based dessert. She told me she really wanted to bring a pineapple noodle kugel (Jewish custardy noodle dish). I've had her noodle kugels, and they're good. Comfort food. Nice and wholesome tasting. But they're not THAT great. And I do not associate them with Thanksgiving. Moreover, I have ZERO counter space in my little cottage in L.A. In fact, I cooked ALL WEEK (one dish a day) to avoid having a cluttered kitchen and cluttered counters on Thanksgiving itself because I KNEW I would have ZERO counterspace. Seriously!! I ended up having to have a staging area in the back yard, and it's a good thing that SoCal was really warm this year, because I don't know how I would have done it otherwise. And STILL there wasn't enough counterspace. So, I told her NOT to bring the kugel because I didn't know where I'd put it. (We converted the tops of the washer and dryer into a bar by putting a tablecloth over them. The top of my 1923 stove was covered with goodies. the two little counters on each side of my kitchen sink had dishes on them. And even the top of the refrigerator had things on it. And so did the breakfast table in the breakfast nook. (I served 13.) But she brought the kugel ANYWAY!!!!!!!! Oooooh!!! I've known her for 25 years, and liked her all along, and we've been through ups and downs, but that made me SO SO SO SO mad!!!! I've lived in huge luxious houses, and now this cute little cottage, but thought she should have respected my wishes on that. I had told her what a great cook she was and that I loved her kugel, but just had no room. When she walked in with that PLUS an apple tart cockaigne, I could have strangled her. She had never seen this house. She said, " Well, there is ALWAYS room and I knew you were stressed so I just brought it anyway. " I had to put it on the counter in the toilet/powder room off the kitchen. Very appetizing. It was made with lots of heavy cream and sugar and white noodles. Oh, well. I was polite. I felt like smashing it into her face. But I'd made so much other stuff (a scruptious savory sweet potato soup that was very filling, a big salad, sweet potatoes from your list of sweet potato recipes here, green bean casserole, the cranberry relish, and --oh yes, I forgot, another transgression -- custardy corn bread with big corn kernels in it. So, by the time we got to the noodle kugel only two people had any, anyway (It would have been fine if people ATE, I just didn't know where I'd PUT It), but it's always sort of an iinsult to a cook if no one eats their food, so it sort of served her right. I used all the family's heirloom crystal and China and silver and fancy formal table linens, going back about 150 years, so it was quite a production. Pretty table. Spent several days polishing and cleaning and getting everything out. Ten I spent all of yesterday and half of the day before washing it all by hand and putting it all away again. And I think I'm going to officiall start SBD tomorrow. Today I have to go out and stock up on veggies. I am keeping my fingers crossed that I can do this, so be prepared for some frantic " HELP! " posts. (Was I right to be outraged over the kugel?
