whole wheat versus white flour for bread

LaGonda,

I think you could switch to whole wheat flour, but you will need to

add wheat gluten for it to rise like the white flour.

We use 1 tbspn. gluten for each cup of flour. Some people think that

is a lot, but our bread comes out very nice that way in our bread machine.

I, personally, don't think whole wheat pastry flour would work well in bread

making.

If you want a recipe for whole wheat bread for the bread machine e-mail me

and I will send it to you. We have used it for a few years, in 3 different

bread machines

and had very good luck with it.

Peg,

I would be interested in your whole wheat bread recipe for the bread

machine. My machine has been collecting dust since I've gone on SBD and

Atkins before that .
