Hi All.

I want to make a beef stew and the recipe calls for fast acting tapioca. I

don't know what it is but it sounds like something that would be taboo on SBD.

Any ideas for substitutions or is it something I can cut out of the recipe

all together? I'm already nixing the potatos....

-- This is usually a thickener. You can leave it out altogether and

have more of a soup, or try using one of the many other thickeners we've

discussed - guar gum, xanthum gum, arrowroot....

Tapioca is often used as a thickener. You don't need it in stew. I made a

pot of stew last night that had beef, carrots, celery, cabbage, and rutebaga

instead of potatoes. Not a drop is left, and DH and I have dropped a couple

more pounds.

Arrowroot flour would be an acceptable substitute for tapioca, which

has a high GI index.
