Guest guest Posted March 7, 2006 Report Share Posted March 7, 2006 Well as if yesterday wasn't bad enough I had a 2 1/2 pound gain this morning. I swear I don't know what is wrong. I can't eat any less cause I'M AT ROCK BOTTOM NOW. Sometimes I wonder if it is all worth it......can't eat a SINGLE bite of any of the foods I love, hurt all over especially back and feet, have other medical problems and now the eye.......I know there are some who are worse off than me but right now knowing that doesn't help any. I don't like a whole lot of stuff....found out Potatoes were my world and now that I can't have them,Not even a bite of them, well lets just say all the fun has gone out of eating. I need to learn to like to different veggies but how to do that is another problem....one I will have to deal with. Anyone know how to cook cauliflower, Brussels sprouts?? Sometimes I cook them in the microwave (according to package directions), season with salt & pepper and a little olive oil (maybe sprinkle on a little rosemary or whatever spice you like), and sometimes I use them in stir-fry. There is one for stir-fry that has broccoli, cauliflower, carrots & asparagus that we get at Wal-Mart, and it is really good. You said you loved potatoes but can't eat them anymore - - do you like sweet potatoes? Sometimes I bake a sweet potato, use some Smart Balance butter, and sprinkle with a tad of cinnamon/sugar mixture and that's what I have for lunch. And you can also drink V8 juice (I love the spicy kind) to get in some veggies. I have a ton of cookbooks, have been a collector for years and purchased a few new ones but the one thing that has helped me the most was www.recipezaar.com. There is a diabetic session plus most recipes have N. facts. I microwave cauiflower and brussel spouts (frozen) according to package directions and add a couple shakes of Molly McButter. Sometimes I add a little Italian dressing to the cauilflower. Check out recipezaar.com. I think you will be glad you did. Hope to meet you at Fun Day Saturday. That's right, I noticed the Texas TOPS website had a fun day listed this weekend in Seguin. That's only about 20 miles away from there. I would really think you are not eating enough, is there a professional or dietitian that you can talk to to see how you can add more foods, I know that if you cut down (They usually say below 1200) calories that your body will STOP burning calories, I certainly hope you can find someone that can help you, because I know you want to lose so bad and this may be stopping you. Or I put a sauce that my Mother used to make on my cauliflower. She would take a cup of mayo & a cup of spicy mustard and mix the two together and put it on her veggies. I have made it with yogurt & the spicy mustard and I like it just as well. I don't want anything on my brussels sprouts but vineager. I probably don't but with the restrictions I have from the pump and other medical problems It don't leave much to eat. Sometimes I don't even get a 1000 calories a day. I'm down to mostly meat and some veggies. Not the veggies I like though. Most meals is a real chore coming up with something to eat and I just say forget, too much trouble.
