Regarding the bread - every, and I mean every school day since last July my daughter has brought an almond butter and jelly sandwich on EnerG Tapioca Bread. You can find this bread in health food stores or buy direct on the web. The bread is the closest I have found to white. Then I don't have to fill my freezer up with it (there is no need for the health food stores to be freezing the bread but they do anyway) and I also bought a case of two slice per package for Disney. That way I don't have to worry about refrigeration and will have bread through the entire trip. If likes the bread you will probably want to consider doing this too. This is also good if you want to bring bread along to restauants or keep some at school for an emergency. The expiration date for the case was 4/01. Of course it isn't as economical but what is with this diet? Guest guest Posted June 11, 2000 Report Share Posted June 11, 2000 - Lucky you that the store doesn't freeze the bread! Once the bread is opened you must keep it cold - we keep it in the fridge. We toast it in the morning before making the sandwich to make it a little less chewy. It keeps fine till lunch. I don't think we've ever given her the bread w/o toasting. We like to order it on line also b/c the loaves are small and they come only 6 to a case. Glad to have helped. Hope the bread is enjoyed! They also had a rice bread that said it was gluten free by the same company.
