coconut vs. mct oil

I do not have a diagnosis yet. But I have been taking coconut oil

for the past 3 months. It has helped me tremendously. I am out of

my wheel chair and have so much more stamina. I almost

feel 'normal' Or as normal as I have ever felt. The medical

diagnosis process moves so slowly. I have been trying to figure out

what is going on with me for the last 24 years. I am convinced that

I have a form of mito disease. The doctors however are far from

that diagnosis. They haven't even agreed to test me for it yet. I

have had to research and act as my own guinea pig in order to get

any improvement. I was reasearching mct oil and discovered that

coconut oil is what it is made from. I also found that coconut oil

is helpful when you have 'thyroid hormone resistence disease'.

(which of course I had to diagnose myself) I figured that since I

had both things going on it was worth a try. I could tell the

difference right away. My doctors are having a fit that I am taking

it. (saturated fat and all) But they have learned to listen to me.

I have stumbled on answers so many times in the past. I decided

that I would take the risk of someday maybe having a heart attack,

if the trade off was a liveable life. Besides it really is easy to

cook with. It doesn't burn easily and makes the food taste great.

My husband actually prefers it.

HI Mike, I order it directly from Omega Nutrition

. It's the most naturally processed

(lowest temp, etc)healthiest kind I could find. It's available in

health food stores in Canada and on the USA West Coast, but

not on the East Coast. We have to order it direct.

I make an awesome (if I do say so myself) " fudge " /chocolate

cookie dough/ " ice cream " by slighly melting it to warm room

temp and adding sifted unsweetened carob (a small amount of,

tahini (ground sesame seed paste), vanilla and lots of chopped

walnuts and then freezing it. Cut it into squares and eat it frozen.

It's my one ketogenic diet FUN thing to eat. How much so I eat?

Um, well, depends on how many pieces I have!!!!

If there's anybody who is interested in " taking " their coconut oil

that way I will post the recipe.
