We are trying to find a new place to live, and have to do this in less than 6 months or we have to sign a new lease... Meanwhile, it's up to me to finish the huge task of going through everything and deciding what to pack, what to keep, what to donate, what to throw away... And, I will be packing up the things to store for a while, too... All that besides the normal cooking, cleaning, laundry, etc.. So, I will try to be online in short spurts most days, but I may fall behind in messages. Also, I have kept my journals daily in a small memo pad I bought, but I apologize for not posting them for so long now. I will post them, in the future, whenever I can. Also, you can be sure that any recipes I find or create, and end up liking a lot, will be shared with the group. Please hope that my family and I can find a nice new place to call home? I have been having the same problem since school started, and I would like to apologize for not being online as much as I should!!! GREEK CHICKEN WITH ARTICHOKES (Kottopoulo me Anginares) 4 large chicken breast halves (about 2 pounds) 2 T. vegetable oil 1/2 tsp. salt 1/8 tsp. pepper 1 clove garlic, chopped 1 C. water 1 tsp. instant chicken bouillon 1 (14 oz.) can small artichoke hearts, drained 2 T. lemon juice 1 tsp. cornstarch 2 eggs Remove bones and skin from chicken breast halves. Heat oil in 10-inch skillet until hot. Cook chicken over medium heat until brown on both sides, about 15 minutes; drain fat. Sprinkle chicken with salt, pepper and garlic. Add water and bouillon. Heat to boiling; reduce heat. Cover and simmer 10 minutes. Add artichoke hearts. Cover and simmer until chicken is done and artichoke hearts are hot, about 5 minutes. Remove chicken and artichoke hearts to warm platter with slotted spoon; keep warm. Beat lemon juice, cornstarch and egg in small bowl until smooth, using fork. That is one reason I like to have the actual measurements (pounds, ounces etc) instead of just 4 breasts or 1 can, because that way you know it is more accurate.
