will be offline a lot for at least a month...

((((group hugs))))))

I am not going offline totally, but will have to cut my online time a lot in

the coming months, especially this month... *sigh*

Too much to do, and too little time. We are trying to find a new place to

live, and have to do this in less than 6 months or we have to sign a new

lease... :(

Meanwhile, it's up to me to finish the huge task of going through everything

and deciding what to pack, what to keep, what to donate, what to throw

away...

And, I will be packing up the things to store for a while, too...

All that besides the normal cooking, cleaning, laundry, etc.. So, I will try

to be online in short spurts most days, but I may fall behind in messages.

Also, I have kept my journals daily in a small memo pad I bought, but I

apologize for not posting them for so long now. I will post them, in the

future, whenever I can.

Also, you can be sure that any recipes I find or create, and end up liking a

lot, will be shared with the group. :)

Please hope that my family and I can find a nice new place to call home? :)

Came across this recipe and was wondering if someone would figure the points

for me? Thank you so much in advance. It doesn't look to bad for what I

can see.

GREEK CHICKEN WITH ARTICHOKES (Kottopoulo me Anginares)

4 large chicken breast halves (about 2 pounds)

2 T. vegetable oil

1/2 tsp. salt

1/8 tsp. pepper

1 clove garlic, chopped

1 C. water

1 tsp. instant chicken bouillon

1 (14 oz.) can small artichoke hearts, drained

2 T. lemon juice

1 tsp. cornstarch

2 eggs

Remove bones and skin from chicken breast halves. Heat oil in 10-inch

skillet until hot. Cook chicken over medium heat until brown on both sides,

about 15 minutes; drain fat. Sprinkle chicken with salt, pepper and garlic.

Add water and bouillon. Heat to boiling; reduce heat. Cover and simmer 10

minutes. Add artichoke hearts. Cover and simmer until chicken is done and

artichoke hearts are hot, about 5 minutes.

Remove chicken and artichoke hearts to warm platter with slotted spoon; keep

warm. Beat lemon juice, cornstarch and egg in small bowl until smooth, using

fork. Add enough water to pan juices to measure 1 cup. Beat into egg mixture

using fork. Return mixture to skillet. Heat to boiling over medium heat;

boil and stir 1 minute. Pour sauce over chicken and artichokes. Sprinkle

with minced parsley if desired. Yields 4 servings.

Wow that was quick! thank you again! but WOW 11 pts per serving! Just

shows me that I don't have a clue without putting in everything. Just to

look at it I did not think it would be that high.

I was a little surprised it was that high too! That is one reason I like to

have the actual measurements (pounds, ounces etc) instead of just 4 breasts or 1

can, because that way you know it is more accurate.
