Guest guest Posted March 3, 2002 Report Share Posted March 3, 2002 Serves 12 Butter for the pan 2 pounds of real cream cheese, at room temperature 1 1/2 cups Equal Spoonful 4 large eggs, at room temperature Zest of one lemon, minced (optional) Zest of one orange, minced (optional) 2 tablespoons heavy cream 1 teaspoon pure vanilla extract Preheat over to 350 degrees. Butter a 9-inch springform pan and set aside. Using an electric mixer, beat the cream cheese well on medium speed until it's absolutely smooth. Slowly beat in the sweetener. Add the eggs one at a time and beat well after each addition. Add the remaining ingredients, scrape down the bowl, and stir to combine. (I use the dry grated orange and lemon peel from Spice Islands and it works just fine.) Pour the cheesecake into the prepared pan and smooth the top. Bake for 10 minutes. Turn the heat down to 275 degrees and bake for one hour, or until the edges are lightly brown. Then turn off the oven. Run a knife around the edge of the pan and return the pan to the oven to cool slowly. Don't worry if the center of the cheesecake looks a little wiggly; it will firm up in the oven. Cover the cooled cheesecake with plastic wrap and refrigerate over night, or up to 3 days. To serve, run a knife around the edges again and remove the sides of the pan. This is so great that even your non-dieting guests will rave over it. And here's what it's worth to us per serving: Protein - 8.2 Gm. Fat 28 Gm. Carbohydrate - 4 Gm. CHOCOLATE DRIZZLE FOR CHEESECAKE If you don't want to use fruit, this is great. Just before serving the cheesecake, melt 1 cup of semisweet chocolate chips in a glass measure in the microwave at 70 percent power for 1 minute. Stir every 20 seconds and stop the moment the chocolate is liquid. Drizzle the liquid chocolate over the cheesecake in a random pattern. Refrigerate for 15 minutes to set before serving. Per serving: Protein - .8 Gm Fat - 4 Gm Carbohydrate - 8.7 Gm Enjoy!
