Guest guest Posted February 4, 2003 Report Share Posted February 4, 2003 Zanna, here is the receipe for Pumpkin Bread: Pumpkin Bread 3 cups sugar 3 1/2 cups flour 2 teaspoons soda 1/2 teaspoon salt 1 teaspoon each: nutmeg, cloves, cinnamon, allspice---all ground 1 16oz. can pumpkin 1 cup oil 4 eggs 1 cup raisins 1 cup chopped pecans Combine dry ingredients in large bowl. Mix liquids and add to dry ingredients. Beat until smooth. Add nuts and raisins. Grease and flour 4 one lb. coffee cans. Fill cans only slightly over 1/2 full. Place on low rack of oven. Bake about one hour @ 325 degrees. Cool on rack, remove from can and wrap in foil. These do make good gifts and can be wrapped if you like after they are wrapped in foil and cooled. Ours hardly get a chance to cool as we eat them sometimes when they are still warm. Just slice, and eat like there is no tomorrow.. I usually slather mine with butter and eat with a cup of coffee.
