The good thing is, when we are regulating our carbs, eating an extra bit of cheese can often work for us. Pick the veggies you can tolerate the best and cook them up with cheese sprinkled over them. I like romano cheese (the kind you sprinkle over italian food) because it has a good strong flavor and a little bit goes a long way. I didn't always like veg myself, but when I learned to cook them lightly (starting with fresh veggies, rather than canned or frozen) I found them much more interesting. There must be something you like...or at least dislike the least! I now belong to 3 groups and trying to keep up with everybody is time-consuming - but in a very good way. Did you see the post about that disease Haemochromatosis? I don't know whether to feel happy that I may now be getting nearer to finding out what is wrong with me or upset because it is such a wide ranging nasty piece of work. In answer to your question the only veggies I really like are tinned garden peas and tinned baby carrots - school couldn't ruin those, I do like a bit of spinach, but that goes soggy so quickly and becomes mush - don't like it then. I like frozen peas cooked with mint sauce on them. Cauliflower cheese as well. I used to have 2 recipes that I used at Christmas 1 for brussels sprouts with breadcrumbs and crumbled boiled egg and the other for carrots with a white wine and butter glaze but I can't remember them and can't find them in any recipe book that I have now.
