Salmon Cakes

Hi everyone. Last night I tried my hand at Salmon Cakes... never

before made them,,, couldn't really find a recipe.. so i made my

own...... my family devoured them!!

I cleaned 3 cans of Salmon, then added:

2 eggs

1 tbsp. margarine (melted)

tsp lemon juice

parsley flakes

onion powder

old bay seasoning

dill seasoning

lemon pepper

mixed all above ingredients and poured over flaked salmon, mixed well,

sprinkled with plain bread crumbs (about 1/2 cup) to form balls.

Placed balls (3 oz each) on sprayed cookie sheet. Sprinkled tops with

old bay seasoning.

Baked 350 about 30 min.

Enjoy!

canned Salmon from Costco this week and try this as well as getting

some smoke flavoring.

Not that I'm really concerned but has anyone dreamed up an

alternative or maybe an improvement/substitution on standard bread

crumbs? Nothing comes to mind right now although that's pretty much

par for the course with me and cooking.

Oh and next summer/fall I'm going to purchase a set of waders, a pole

or two, some tackle and a license for about $300 and go stand in the

Grand River on the weekends. Here's a picture of where I'll be

salmon galore in the river. My neighbor caught eight this year and a

friend of his caught 20. I hear you have to have a lot of patience.

Mike,

Take that special K cereal you like, grind that up and use it for break

crumbs. It will also add some protein to it.

Special K Protein Plus

Well DUH! Damn I feel stupid. Thanks for that kick in the brain fart!

I'll do that. I was thinking, too, I could use soy chips if I needed

too except they're not nearly as dense. I am going to try the soy

chips as " crackers " for my salmon pate though. That should kick ass.

Oh and I managed to find FAT FREE feta cheese too. Sure it's a couple

bucks more expensive but it has something like a third or a sixth as

many calories.

Hi Mike

I'm told oatmeal makes a good substitute for bread crumbs, and you can always

use crushed crackers...different flavors/kinds give your dish different tastes.

They're white cheddar or ranch flavored. Maybe the Ranch would be

good. I'll give it a shot except that I think they'd get soggy to

easily. Maybe not. Soy are pretty sturdy beasties. I've also had some

minor success searching for soy breadcrumbs. I haven't actually found

any yet just mentions of them.
