Last night I tried my hand at Salmon Cakes... never before made them,,, couldn't really find a recipe.. so i made my own...... my family devoured them!! I cleaned 3 cans of Salmon, then added: 2 eggs 1 tbsp. margarine (melted) tsp lemon juice parsley flakes onion powder old bay seasoning dill seasoning lemon pepper mixed all above ingredients and poured over flaked salmon, mixed well, sprinkled with plain bread crumbs (about 1/2 cup) to form balls. Oh and next summer/fall I'm going to purchase a set of waders, a pole or two, some tackle and a license for about $300 and go stand in the Grand River on the weekends. I was thinking, too, I could use soy chips if I needed too except they're not nearly as dense. I am going to try the soy chips as " crackers " for my salmon pate though. That should kick ass. I'll give it a shot except that I think they'd get soggy to easily. Maybe not. Soy are pretty sturdy beasties. I've also had some minor success searching for soy breadcrumbs.
