Chicken Breasts Marbella serves 4 4 (6-ounce) boneless and skinless chicken breasts 2 garlic cloves, peeled and chopped 2 tablespoons dried Greek oregano ¼ cup dry white wine 2 tablespoons red wine vinegar 8 prunes, pitted 8 dried apricots 3 tablespoons brown sugar or brown sugar substitute ¼ teaspoon salt 2 bay leaves Place chicken in a large shallow glass or ceramic bowl and add remaining ingredients. Cover and refrigerate 4 hours or overnight. Preheat the oven to 350 degrees. Place entire contents of the baking dish, including marinade, in the oven and bake for about 20 minutes or until chicken is tender. Remove bay leaves before serving. per serving: Calories 281 Protein 40.2 g Carbohydrates 22.5 g Fat-Total 2.23 g Cholesterol 98.6 mg Calcium 40.9 mg Iron 2.22 mg Sodium 249 mg Happy Cooking!
